Easter menu, low carb style

- four eggs & bacon
- two low carb pancakes with a sausage patty
- four eggs & broccoli & bacon & a low carb almond cheese round


  1. I made "sort of" almond cheese rounds after I followed the link and decided that I could do that. I didn't have almond meal so I used half oat flour, a quarter cup of flax seed meal and a quarter cup of coconut flour. I also made them into drop biscuits rather than rounds. They weren't too bad for all of the modifications. I'll bet yours were better though! Happy day after Easter. :)

  2. Happy Easter to you also! A little bread-y treat is a nice chance of pace... I'm sure you can well imagine! :) I do have some oat flour, but I've never used it.
