Low carb meatloaf

Weeknight Meatloaf Recipe
- Two pounds ground chuck
- One cup Parmesan cheese
- Four eggs
- One medium onion, diced
- Two cloves garlic, minced (I use the pre-minced kind in the jar)
- One tablespoon chili powder
- One teaspoon salt
- Half a teaspoon pepper
- Two tablespoons Worcestershire sauce
- 1/4 cup low carb ketchup (for topping)

Line loaf pan with foil and preheat oven to 375 degrees. Combine eggs and Parmesan cheese and all of the ingredients except for the meat and the ketchup. Once well-combined, add in the meat and form in loaf pan. Top with low carb ketchup and bake about an hour. Makes eight slices.

This recipe was inspired by a couple of the meatloaf recipes over at Linda Sue's low carb recipe site.

Weekly Wednesday Weigh-In: 254.8, which is 1.4 pounds down from last week. I will take it! I'm within ten pounds of my lowest adult weight ever, which is scary, but so exciting!

Easter Menu

Menu for Easter Sunday

- Unpotato salad*
- Open faced sloppy joes on oopsie rolls with hot pepper jack cheese
- Some hot pepper jack cheese
- 12 saltines with natural peanut butter**
- Meatloaf
- 3 frozen strawberries
- 1/4 cup English walnuts

*I used Nancy's recipe and it's incredible. If you like potato salad, you will love this. It's just mustardy enough, if you ask me. I find a lot of the pre-made salads in the store MUCH too mustardy (and not to mention, don't even think about how long they have been on the shelf!) I especially love the ones that say they are Amish. Trust me, I live amongst the Amish and they did not make that potato salad, lol.

To get on with it, I used green onions and regular vinegar, just like did in her recipe and it's sooo good! The only thing I changed was I used frozen cauliflower instead of fresh and I cooked it for 7 minutes and 77 seconds in the microwave ahead of time.

**The saltines were not low carb, but at least incorporating in the healthy protein of the natural peanut butter surely helped my blood sugar not to spike (as much). I do not know this to be true, but I swear, I heard somewhere that incorporating a protein with a refined carbohydrate can help lessen the blow to blood sugar? I do not have a glucometer, so I cannot say for sure!

Also, had some saltines today with peanut butter crackers.... about 1/4 or 1/3 of the pack, so nothing that major. I had them with about 2 tablespoons of natural peanut butter.

Low carb eats & Mom has cancer

- Two polish sausages with diced tomato, diced onions, low carb ketchup and mustard
- Mock rice pudding
- Cottage cheese with cinnamon and Splenda*
- Polish sausage stir-fry with cabbage, onions, green peppers with riced cauliflower
- Low carb tortilla with smoked swiss cheese, pepperoni and half a tomato slice*

*Total comfort foods, by the way. I was not even hungry when I ate them.

Please keep my mom in your prayers, everybody. I know that I have mentioned her a lot on my blog before and she needs all of the good thoughts and positive energy that we can muster, as she is battling breast cancer. She got the news yesterday, so obviously, the mood has been bleak around here, but life is going on. We are having a bbq tomorrow.

I do live with her right now and she is a fighter from the word go, so I don't doubt that she will kick this cancer's ass. I'm going to stay on the path with my low-carb cooking, which will help me retain the small bit sanity I have left during this tough time and it will also help the cancer not to spread within her, or that is what I believe at least.

We had our rough times during my teenage years, but in my twenties, we have really become best friends. I'm sure a lot of you can relate. I'm glad that I can be here to give her the support and encouragement she needs, but I'm also very scared.

It's difficult not to medicate with food, but if I can get through this, I can get through anything. Eating bad foods will not help the issues, anyway. They will make me feel like crap if I give in and stuffing your face never solved anything, anyway. Well, not for me, anyway.

Heinz, how I missed thee.

Weekly Wednesday Weigh-in: 256.2

Has anybody else had trouble finding low carb ketchup? I looked at three different local stores that typically carry it, but each store was out! It's basically Heinz ketchup, sweetened with Splenda, and it only packs one carb per tablespoon, which is 20% of the carbs of its high-carb counterpart. I was starting to really think that it may be discontinued, and I would be left, making my own ketchup! Sure, you can get it online, but at $3.49 for a bottle smaller than your typical ketchup-bottle, that seems like a luxury I can do without, but I was seriously considering it.

My low carb ketchup woes were placed on hold yesterday when I received a care package from my girlfriend, containing seven bottles and two bags of Starbucks coffee to boot! She is just so amazingly thoughtful and sweet. Having somebody who supports you, you can trust, makes you laugh and sends you low carb ketchup is a keeper in my book, any day of the week!

*If you like traditional, high-carb, unhealthy rice pudding, you will love this stuff! I recommend waiting for it to get cold before serving, because it's a little watery when hot.

My highest recordable adult weight was 306.4, but I know that it's been higher than that because before that weight, I definitely was eating healthy and losing weight before the weigh-in at my doctor's office. I would honestly guess my top-weight at about 310 if not 315. I'm starting to see that I have more of a butt than I thought I did, too. I always thought I had no butt, but it turns out that I really do have one! My weight tends to go to my "front butt" (stomach), thighs, arms, face and general upper body when I gain, which is about the most unhealthy place to gain.

I feel like before, my goal in life was to do as much harm to my body with food possible. I really looked at as a fix, and in many ways, I still do. Now, though, I'm attempting to un-do the years of harm that I have done to myself through overeating and choosing all of the wrong foods. I have lost roughly fifty pounds and I have another eighty pounds to go... and honestly, it just feels so great to be headed in the right direction.

These words are how I feel after I binge.

I realize the binge is only powerful as I give it credit for, so I'm done with the processed junk, but I want to remind myself, how I feel when I eat these things.

I don't want to disappear when I fuck up. I'm here to face these problems head-on, because food is a very lousy band-aid and and even crappier pain killer.

Crazy bread and the girl who stole my heart

Freedom is choosing real foods to nourish my body with... foods provided by this lovely Earth, not an assembly line where profit and addictive-nature are the bottom line. Yeah, I'm basically back on the band wagon. I'm gonna plow through the 250's like nobody's business.

Yesterday's eats:

- Two egg omelet with colby~jack cheese, fried in butter
- Little Caeser's nasty pizza ~ three pieces with crazy bread too ~ an appropriate name, I think, because I'm crazy if I eat it, knowing what it does to my insulin levels
- Mom's crazy cabbage

This song is dedicated to Angie, my wonderful and amazing new girlfriend. (Yeah, we have the same name. How cute are we?!) I hope she sees this. Oh, knowing me I will probably tell her about it before she finds the chance to find it herself.... *sigh*.
