Weeknight Meatloaf Recipe
- Two pounds ground chuck
- One cup Parmesan cheese
- Four eggs
- One medium onion, diced
- Two cloves garlic, minced (I use the pre-minced kind in the jar)
- One tablespoon chili powder
- One teaspoon salt
- Half a teaspoon pepper
- Two tablespoons Worcestershire sauce
- 1/4 cup low carb ketchup (for topping)
Line loaf pan with foil and preheat oven to 375 degrees. Combine eggs and Parmesan cheese and all of the ingredients except for the meat and the ketchup. Once well-combined, add in the meat and form in loaf pan. Top with low carb ketchup and bake about an hour. Makes eight slices.

I love meat loaf, I make it a lot. It turns out different each time because I don't use a recipe these days. Only trouble is it is too easy to eat too much of it, it is so delicious.
