Day 164 Low Carb Daily Menu

Day 164 Low Carb Menu

- Cabbage / zucchini / onion stir-fry
- Albacore tuna salad on an oopsie roll with diced onions
- Meat lover's oopsie pizza
- Low carb cheesecake
- Low carb peanut butter fudge
- Meat sauce served over spaghetti squash with Parmesan cheese

This fudge is amazing! Wow.... it's incredible.

  1. Do you eat vegetables and fruits? Like green, orange, and yellow,purple,..etc. ones? It seems like you can't get the "rainbow" of colors on this diet. I'd be concerned with getting enough vitamins and minerals.

  2. Yes, I do eat LOTS of fruits and vegetables. In fact, as you can see from my menu for yesterday, I ate cabbage, zucchini, onions, tomatoes, mushrooms, spaghetti squash and garlic... just in one day. Of course, all days are not this good and I do try very hard to get a "rainbow" of colors in. I would check out google and you will find a wide variety of low carb fruits and vegetables.

    Some of my favorite fruits include strawberries, blueberries and raspberries.

    I know a lot of people are concerned when they go low carb that they can't eat any veggies and fruits. This is simply NOT the case!

  3. You liked the fudge!! Isnt it yummy? I need to make more, I really like it. I just bought more peanut butter today and I got unsalted natural peanut butter to see if that changes the taste any. I'm sure it will still be awesome though! I'll probably taste it just to make sure its good and if it seems to need salt I could throw a pinch in.

    I always think its interesting that low carb is viewed as a diet that does not contain enough fruit and vegetables. I eat more vegetables than anyone I know, even my low fat marathon running friend!!! I make stir fried peppers often and right there is orange, yellow and green...strawberries are red...eggplant is purple...my low carb friends are the healthiest people I know.

  4. I think unsalted peanut butter would be even better. I made mine with salted butter and crunchy natural smucker's peanut butter and omg, you should have warned me how good it is! I found cheap liquid splenda at www.ez-sweetz.com if you ever need more...

    Also, guess what I did to the fudge? I added 2 extra oz of cream cheese just to bulk it up a little bit. So, a total of 4 oz of cream cheese... This made the pieces bigger. I have never made it with only 2 oz like the recipe calls for... but it's sooo good! I've eaten 2 pieces today and I want more already!

  5. Hey I might try that, adding some cream cheese, because the pan I have to make this in is probably too big, if I had one a bit smaller they could be thicker pieces. I will try it with extra cream cheese next time.

    I really have to control myself with this fudge because I could eat alot of it at once. However, when I was really stressed last week and I actually did eat alot of it at once, I didnt get sick and I didnt gain weight so it was ok. And after a couple of batches I was able to just have a couple of pieces at a time (LOL it took me two batches to get to that though, ha ha!)

  6. Oh ok That's what I have been trying to figure out how many fruits, I can eat and still continue to release weight. I started eating low carb only 1 week ago when I read "Good Calories Bad Calories" by Gary Taubes. I definitely am going to try some of your recipes especially the oopsie roll :)
