- Meatloaf with reduced sugar ketchup
- Josie's spaghetti squash - made with hot pepper jack cheese
- Mashed cauliflower, drowned in sausage/hamburger alfredo "gravy"
I really love the mashed cauliflower. I put in some Parmesan and chives and wow! When I ate a spoonful of them, they really tasted just like potatoes... not cauliflower. Crazy, huh?? These will definitely be a staple around here. Thanks for the tip, Harry!
I have been unsuccessful at making mashed cauliflower, it just tastes like mashed cauliflower to me!!! My problem seems to be they are sort of "watery" how do you get around that?
ReplyDeleteI do put all kinds of things on my regular cauliflower though and I do love that! Especially, roast beef!
so...what do you put in your meatloaf? I want to make some but my hubby insists it wont be good without the breadcrumbs, and I think surely they wont be missed?
ReplyDeleteFor a two pound meatloaf, I use onion, garlic, 1 c. parm cheese, 4 eggs, chili powder, Worcestershire sauce, salt, pepper.
ReplyDeleteYou know what is weird? I swear I had that same problem before with the cauliflower being kind of soupy when I used my food processor. This is only the second time I've ever made them... so I'm no expert! LOL.
I just drained it well in my veggie strainer and added a tablespoon of butter, a sprinkle of Parmesan cheese, and mashed the "potatoes" with my stick blender.
mashed cauliflower is the best! i usually let it fry between two pieces of paper towel and squeeze the water out of them. You can also add cream cheese to them to thicken it up
