Day 80 Eating pound cake and loving life

DAY 80 Low Carb Food Journal

- Ham and swiss on a grilled oopsie with tomato
- Salad with cucumbers, cheese, tomatoes, onions and ranch
- Swiss cheeseburger with lettuce, tomato, onion & LC ketchup on an oopsie
- A slice of pound cake with peanut butter frosting
- 1 slice deluxe american cheese

The best thing about this pound cake... besides the 10 grams of protein... If you use your favorite no-carb liquid sweetener instead of granulated Splenda, it's only three net carbs per slice. In the past, I've put strawberries and whipped cream on this... as it makes the most decadent strawberry shortcake... Warning, may cause second helpings!

  1. Have you tried strawberry shortcake with an oopsie? I did this and it works well. I still havent mastered oopsies though, because they still come out quite flimsy and falling apart even when refrigerated for several hours. I'm not sure what I am doing wrong except that maybe I just cant make them thick enough with a flat pan. I cant find a muffin top pan!!!!

  2. I know Mad's got some cooking projects for this weekend - a few new desserts to try. Maybe I can convince her to make one of those pound cakes next weekend. :-)

  3. Nancy, one time I found one thru Collections Etc. which was not that expensive... then I had to buy one thru cooking.com which was a LOT! I think it was like 17 dollars or more if I remember correctly. You might be able to find one at a specialty kitchen store... not sure.

    To tell you the truth, I've never made mine without a muffin pan... I think they would be very hard to make.

    Harry - you totally have to try this. Don't say I didn't warn you, though. BTW, your LC peanut butter shakes are addicting... Why did you not warn us of this?
