Day 116 Low Carb

Day 116

- Low carb vanilla protein shake with 1 tablespoon natural peanut butter and 1/4 cup shredded coconut, sweetened with Sweetleaf Stevia
- Low carb vanilla protein shake with 1 tablespoon natural peanut butter, 2 T whole ground flax meal and 1/4 cup shredded coconut, sweetened with Sweetleaf Stevia*
- Chicken salad with tomato and onions on an oopsie roll
- Spaghetti Squash Casserole (recipe will be posted)

*Maybe I used too much flax meal in this shake, but I could not even finish the whole thing. I wasn't too crazy about the taste... At first, I loved the way it thickened it up, but by the end, it was a little too much. I know that it has great health benefits, so I will try to incorporate it in with my dinner instead of my protein shakes.

  1. flax is a hard sell, to me it tastes slimy. I tried to make some flax buns...figured they will be a baked item right? Still slimy.

  3. I use SweetLeaf Stevia Plus in my own fruit smoothies. It makes it soooo yummy!
